Egg White French Toast



Today's wonderfull post is about french toast. However, this recipe for french toast is a little different. How? It uses only egg whites, not full eggs. It also is a recipe for a single serving, so you do not end up with 1/8 of an egg or 5/6 cup of milk etc.
Anyways, here is a delicious french toast recipe I made just less than an hour ago! Enjoy!




Egg White French Toast
(for one person-about 2-3 slices of bread)

Ingredients:
  • 2 egg whites
  • 1/2 cup 2% milk (feel free to use low fat or any substitute)
  • 1/4 tsp salt
  • 2 packets splenda OR 1 tbsp sugar or ommitt
  • 1 tsp vanilla extract
  • dash cinnamon
  • 2-3 slices white bread or any other bread
Pre heat skillet and combine all ingredients listed above except for bread. Dip bread into mixture, let soak for a few seconds, flip over, soak for a few seconds then put on griddle. Flip when side starts to brown, and brown the other side. Done!! Enjoy plain or with powdered sugar or syryp or berries....or chocolate!!

Super Healthy Pancakes :)

Today for lunch I had yummy pancakes....and they were healthy too!!
I was going to take a picture of the last bite.....but I ate it before I realized. oops :)
This recipe makes one delicious pancake. Perfect for breakfast or anytime you are craving a pancake.
And because there is no oil, or sugar and contains whole wheat, sesame seeds, oats, and bran...it's super duper nutritious!


My fave way--> with cinnamon, and a special combo of spices (in Holland we call it Speculaas Kruiden) It's kind of like a  gingerbread taste. Sprinkled with some splenda/sugar mix.

Super Healthy Pancakes
  • 1/8 cup white flour (if you want nice fluffy not doughy pancakes DO NOT ommitt or use whole wheat!)
  • 1/8 cup whole wheat flour (or white)
  • 2 tbsp quick cook oats
  • 5 tbsp wheat bran (or add a but extra flour)
  • 1 tbsp sesame seeds (optional)
  • 1 tsp baking powder
  • pinch salt
  • 1 egg white beaten
  • milk, about 1/4 cup
  • vanilla extract
  • flavouring such as cocoa, peanut butter, sugar, spices, cinnamon, choc chips, fruit, etc.
Combine all dry ingredients then add milk to make a sticky dough add egg then more milk until it is runny but not too thick.
Bake on a griddle or in a pan.
Serve with anything you want.
I sprinkle a package splenda on top with a little sugar.

Peanuty Chickpeas & Rice

YUMMY!!


I have not poste anything for almost a week!! That is crazy. I really wanted to committ to this blog and post regularly with GOOD recipes not the last few I posted, they were good but not GOOD, if you know what I mean. I posted them because I needed to post something. However I should go back to quality not quantity.
I had a busy work week, taking a lot of extra shifts here and there (I work at Tim Hortons :) and trying to get some horse riding in as well. Not to forget my heifer (I show dairy cattle) I have been neglecting that poor animal.

(yup she looks like a beef cow!! she's fat!)but i love her anyways!

Want to hear a funny story?
We were at a horse show (our first) and he has always walked in the trailer no probs except for when we wanted to leave! He stood in front of the trailer and wouldn't move. He did not kick, rear, paw, or go crazy. He just stood there....great. how were we going to get him home??
It took a team of us. Step by step we moved him into the trailer, he didn't move a muscle, we practically lifted a thousan pound animal  into the trailer. My horse (btw his name is Major) stayed calm and didn't try to kick the whole time. silly animals!

Ok, less talk about me and my animal stories lets get to food! (because after all that you got to be somewhat hungry!)

Here is the recipe. Perfect for vegetarians!

Peanuty Chickpeas & Rice
  • Half a 16oz can (so 8oz) of chickpeas ....or garbanzo beans...whatever you call them!
  • 1/2 cup smooth low fat peanut butter
  • 2 tbsp reduced sodium soya sauce
  • 1 tbsp vegetable/olive oil (or ommitt for lower fat)
  • 1 tbsp sugar or splenda (or ommitt for a salty not sweet version)
  • 1 cup cooked rice (your choice of rice! I used regular white rice)
  • about 1/2 cup warm water
Instructions
Combine all ingredients except for rice and beans in a small sauce pan and bring to a boil on medium heat. After it boils add any extra sugar, soya sauce, peanut butter to suit your taste. Add water if sauce gets really thick. Once it is up to your taste remove from heat.
Add cooked rice and beans and combine.
That' s all!

Finally a Post!

Sorry!!
I haven't really baked or cooked anything worthwhile these past  couple of days and I did not want to bore you with any personal news/stories.
Today I made some really quick and easy food.
I rarely use recipes these days. I usually make up the recipe as I go or use a recipe as a really rough guideline and I usually end up changing all of it and making it my own.
Today I wanted something healthy for dinner ( I had a ginormous amount of French Vanilla Ice Cream today at my face ice cream shop in Hollyrood. $2 and you get a big bowl full!)
I made a vegetable curry soup and for dessert I made a cakey-cobbler type of dessert using up two frozen bananas.
Here are the recipes.

 (using my crappy no good camera)

Veggie Curry Soup
  • 1 lb lean ground beef, salted & seasoned
  • 1 onion
  • 1 cup chopped green beans
  • 1 cup chopped cabbage
  • any other veggies you want!
  • 4 cups water
  • 1/2 cup flour
  • 1 Bouillon cube
  • 1 tsp-1tbsp Curry Powder
Roll meat into small meat balls & brown. Add onion. Transfer to soup pan (leave meat grease in frying pan)
Add other veggies and mix water with flour. Add to soup. It will act as a thickening  agent. Add bouillon and curry powder. Add any extra seasonings you would like.

& for dessert



Banana Anna
(catchy name?? it's not cake, it is not a cobbler nor a pudding. so what would you call it??)
  • 2 large frozen bananas cut into pieces & placed on bottom of small baking pan
  • 1 cup milk
  • 3/4 cup flour
  • 1/8-1/4 cup margarine melted
  • 4 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg yolk or 1 egg
Mix all ingredients and pour over bananas. Bake at 350 degrees for about 20-30 minutes.
